Cheese and Bean Quesadilla Bento Box
Switch up from a boring sandwich to a delicious quesadilla for lunch. This bento box is loaded with fresh fruits, vegetables and beans for a meal that is sure to keep your little one full.

Ingredients
- 2 (8”) flour tortillas
- 1⁄2 cup black beans, drained and rinsed
- 1⁄2 cup Mexican blend shredded cheese
- 1⁄2 cup grapes
- 1 cup strawberries
- 1 tomato, diced
- 1 avocado, diced
- 1⁄2 cup salsa, divided, for dipping
Directions
- In a large skillet over medium heat, add a tortilla. Spread black beans and cheese over tortilla. Top with remaining tortilla and cook about 3-5 minutes, until golden brown and cheese is melty.
- Flip and continue cooking 3-5 minutes, until golden brown on the other side. Remove from pan and cut into pieces.
- Place quesadilla pieces into two bento boxes. Divide grapes, mango and strawberries into each box. Place tomato and avocado together into each box, divide salsa into two lidded containers and place into each box.
- Serve and refrigerate leftovers.
