Summer Gazpacho

Soup in the summer? Why not? Enjoy a classic Spanish-style soup – gazpacho – which is traditionally served cold.

Ingredients

  • 1⁄2 cup olive oil
  • 1⁄4 cup lemon juice
  • 1 3⁄4 cups Simple Truth Organic™ Vegetable Broth
  • 1⁄2 teaspoon Simple Truth Organic™ Chipotle Hot Sauce
  • 2 teaspoons coarse salt
  • 6 cups tomato juice
  • 1 Vidalia onion, chopped
  • 2 tomatoes, cored and chopped
  • 2 green bell peppers, cored, seeded and chopped
  • 2 cucumbers, peeled and diced
  • 1 stalk Simple Truth Organic™ Celery Hearts, chopped

Directions

  • In large bowl, combine oil, lemon juice, broth, hot sauce, salt and tomato juice. Stir in onion, tomatoes, peppers, cucumbers and celery. Season with freshly ground pepper.
  • Chill at least one hour before serving.
