Summer Gazpacho Recipe
Summer Gazpacho
Soup in the summer? Why not? Enjoy a classic Spanish-style soup – gazpacho – which is traditionally served cold.

Ingredients
- 1⁄2 cup olive oil
- 1⁄4 cup lemon juice
- 1 3⁄4 cups Simple Truth Organic™ Vegetable Broth
- 1⁄2 teaspoon Simple Truth Organic™ Chipotle Hot Sauce
- 2 teaspoons coarse salt
- 6 cups tomato juice
- 1 Vidalia onion, chopped
- 2 tomatoes, cored and chopped
- 2 green bell peppers, cored, seeded and chopped
- 2 cucumbers, peeled and diced
- 1 stalk Simple Truth Organic™ Celery Hearts, chopped
Directions
- In large bowl, combine oil, lemon juice, broth, hot sauce, salt and tomato juice. Stir in onion, tomatoes, peppers, cucumbers and celery. Season with freshly ground pepper.
- Chill at least one hour before serving.
